INGREDIENTS:

2 medium sweet potatoes.
½ butternut squash.
1 aubergine.
5 garlic cloves (unpeeled).
3 tbsp extra virgin olive oil.
1 tsp good quality balsamic vinegar.
6 tsp raw honey.
Salt and freshly ground black pepper.
200g feta cheese.
METHOD:
Heat the oven to gas mark 5 (375 F, 190 C).
Chop all the vegetables into bite-size pieces (except the garlic ) and put into a roasting dish.
Add the vinegar, honey, mixed herbs, salt and pepper and a few glugs of olive oil (enough to cover everything well) and mix together. This is best done with your hands – get stuck in!
Put in the oven and leave for 40-45 mins or until veggies are soft.
Remove from the oven and sprinkle chunks of feta.
Serve with steamed greens.
