Chicken breast wrapped in bacon

INGREDIENTS:

  • 4 chicken breasts.

  • 2 fresh tomatoes thickly sliced.

  • 3-4 tsp Dijon mustard.

  • 4 rashers of smoked back bacon.

  • Salt & pepper.

METHOD:

  • Heat oven to 200°.

  • Prepare baking tray with a sheet of grease-proof paper.

  • Smear the mustard on each chicken breast.

  • Carefully wrap each chicken breast all the way around with a rasher of bacon and place on the baking tray.

  • Place 2 or 3 slices (depending on the size of the chicken breast) on each.

  • Sprinkle with salt & pepper to taste.

  • Bake for 20-25 mins.

Alternatives/additions:

  • Mustard can be smooth or whole grain
