INGREDIENTS:
4 chicken breasts.
2 fresh tomatoes thickly sliced.
3-4 tsp Dijon mustard.
4 rashers of smoked back bacon.
Salt & pepper.
METHOD:
Heat oven to 200°.
Prepare baking tray with a sheet of grease-proof paper.
Smear the mustard on each chicken breast.
Carefully wrap each chicken breast all the way around with a rasher of bacon and place on the baking tray.
Place 2 or 3 slices (depending on the size of the chicken breast) on each.
Sprinkle with salt & pepper to taste.
Bake for 20-25 mins.
Alternatives/additions:
Mustard can be smooth or whole grain
