Baked salmon with veggie parcels

INGREDIENTS:


  • Salmon steak.

  • Juice of ½ a lemon.

  • Sprig fresh thyme (optional).

  • 1 courgette sliced (1 cm).

  • ½ leek sliced (1 cm).

  • ½ onion finely sliced.

  • ½ carrot ‘Julienned’.

  • Handful of frozen peas.

  • Slice of lemon.

  • Drizzle of olive oil.

  • Salt and freshly ground black pepper.

METHOD:

  • Pre-heat oven to gas mark 6/200°C.

  • Make two ‘boats’ out of tinfoil and place the salmon and thyme inside one.

  • Pour the lemon juice on the fish and a sprinkling of salt and black pepper and seal the tinfoil around the fish.

  • Place all the veggies and lemon in the second tinfoil ‘boat’, drizzle the oil and sprinkle a little salt and pepper, and seal the tinfoil around the veggies.

  • Place both tinfoil parcels in the oven and cook for 20-25 mins.
