INGREDIENTS:
Salmon steak.
Juice of ½ a lemon.
Sprig fresh thyme (optional).
1 courgette sliced (1 cm).
½ leek sliced (1 cm).
½ onion finely sliced.
½ carrot ‘Julienned’.
Handful of frozen peas.
Slice of lemon.
Drizzle of olive oil.
Salt and freshly ground black pepper.
METHOD:
Pre-heat oven to gas mark 6/200°C.
Make two ‘boats’ out of tinfoil and place the salmon and thyme inside one.
Pour the lemon juice on the fish and a sprinkling of salt and black pepper and seal the tinfoil around the fish.
Place all the veggies and lemon in the second tinfoil ‘boat’, drizzle the oil and sprinkle a little salt and pepper, and seal the tinfoil around the veggies.
Place both tinfoil parcels in the oven and cook for 20-25 mins.
